I found this recipe online a while back, got great reviews and I had to try it! It’s so simple and really good! We love having this with breadsticks and salad!
You need 3 1/2 cups diced, peeled potatoes, 1/3 cup celery, 1/3 cup finely chopped onion (I hate onions, so I leave these out), 1 cup diced, cooked ham, 3 1/4 cups water, 2 TBS. chicken bouillon granules, 1/2 tsp. salt (to taste), 1/4 tsp. black pepper, 5 TBS. butter, 5 TBS. flour, and 2 cups milk.
Combine chopped potatoes, celery, onion, ham and water in stockpot. Brink to a boil, then cook over medium heat until potatoes are tender. Stir in bouillon granules, salt and pepper.
In a separate saucepan, melt butter over med-low heat. Whisk in flour and cook about 1 minute.
Slowly stir in milk and continue stirring until thick. Pour this mixture into the stock pot and cook soup until heated through. Add more chicken granules until you like the flavor…but, make sure not to make it too salty!
Eat up!
