Aahh…the ever old, day-after-Thanksgiving question, “What to make with the left over bird?” Here a couple ideas, (hopefully new) to you! Happy Black Friday to you all!
Curried Turkey Salad
3 cups cubed cooked turkey
1 1/2 cups seedless red grapes, halved
4 celery ribs chopped
2/3 cup of mayo
2 T lemon juice
1 tsp. curry powder
1/2 tsp. salt
1/2 cup cashews
Directions:
In a large bowl, combine turkey, celery and grapes. In a small bowl, combine mayo, curry powder, lemon juice and salt and mix together. Pour over the turkey and toss to coat. Let refrigerate for at least an hour and right before serving, stir in cashews.
Turkey Tetrazzini
16 ounces of uncooked spaghetti
3/4 cup butter
3/4 cup all purpose flour
4 1/2 cups chicken broth
3 cups milk
2 1/2 cups grated Parmesan cheese
6 cups chopped turkey
Directions:
1. Preheat oven to 350 degrees F. Lightly grease a medium baking dish.
2. Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente. Drain, and place in the prepared baking dish.
3. Melt butter in a medium saucepan over medium heat. Stir in flour. Mix in chicken broth and milk. Cook and stir until the mixture comes to a boil. Stir in about 1 1/3 cups Parmesan cheese, and remove from heat.
4. Mix chicken broth mixture and turkey with spaghetti. Top with remaining cheese. Bake 1 hour in the preheated oven, until surface is lightly browned.
