Simple Chai Spiced Gingerbread Cookies (she: Brooke)

Hi! I’m Brooke, Author of Tongue-N-Cheeky website- where I love making custom created, lip-smacking recipes with personality. Pertying them up with simple, practical and eye popping style, makes me happy too! You can see some of my work on The Meanest Mom and cJane Run. Just a little bit about me: I believe in sugar and butter and all things color. I believe in the power of band aids and the strength of community, and I’m ever so tickled to be here sharing one of my favorite holiday cookie recipes with you!
With a copper penny in hand, standing over the sparkling fountain outside Macy’s,
I dared make a December wish.
It’s a simple one.
{not one of those big-minded hoping for world-peace impossibilities.}
It involves a single visit to the mall. Just one.
It involves not running last-minute errands. Not standing in long lines. Not obsessing over checklists.
It involves not telling my children ‘just a minute’ or ‘hold on a sec.’
It has nothing to do with doing, going, getting, accomplishing.
It has everything to do with not being.
It is home-simmered stews and lazy afternoons.
Hand wrapped gifts and homemade cookies.
Unused alarm clocks and late- night reading.
Peeling the outside of an orange in a perfect spiral,
and rolling the sweet fruit around and around in my mouth,
taking time to taste.
To taste.
Taste.
That is my wish.
To taste the season.
Savor it.
Homemake it.
Enjoy it.
Entirely
And, ya know what?
I had two pennies.
So, I threw them both in, and wished the very same for you.
May your season be savored.
Simple Chai Spiced Gingerbread Drop Cookies
A quick simple, and utterly delectable recipe for the holiday season. These cookies call for the McCormick Chai Spice blend, which has nothing to do with Chai tea. So if you aren’t a tea- drinker, don’t worry! The Chai Spice blend is actually just a gorgeous mix of incredibly savory spices, including ginger and cinnamon and a whole heap of delicious. It’s entirely worth a mid-winter drive to the store to get a bottle for your pantry. Enjoy! Enjoy!
1/2 cup of butter
1 cup brown sugar
2 eggs
1/2 Tbs. of Chai Spice Blend
2 Tbs. molasses
1 tsp. baking powder
2 1/2 cups of flour
2 cups white chips
Preheat oven to 350 degrees. In a large bowl, beat butter, brown sugar and eggs until light and fluffy. Add remaining ingredients and mix well. Drop dough by the tablespoons on to an ungreased cookie sheet. Bake for 8-10 minutes, or until cookies are barely browned around the edges. Cool. Enjoy with a chilly glass of milk.
