Calzones (she: Rachel)

Howdy! I’m Rachel, sister to Jessica and cousin to Mariel. My husband and I have been married for 5 1/2 years, and we have a wonderful little 10 month old boy. I keep myself busy taking care of the boys and teaching school part-time. In my “spare time,” I love to cook, read, play the piano, organize, and spend time with my 2 favorite guys.

I’m back today to share with you one of our most favorite recipes. I don’t know about you, but at our house, by the time Friday night rolls around we’re ready to crash. “Date Night” seems to be pizza and a movie, cuddled up on the couch. Although I’m a fan of several different traditional pizza recipes, this calzone recipe tops them all! We love that everyone gets their own, individual pizza pocket. No more half-and-half pizzas, or picking off the toppings I hate!The dough is quite simple to make, and well worth your time (it actually takes very little time to make – you just have to plan ahead to allow time for it to rise). The recipe makes 12-15 calzones, so they’re perfect for having friends over – and kids love to help make their own! I’ve also cut the recipe in half when it’s just the hubby and me, so don’t be overwhelmed by the size of the recipe. Here’s what you’ll need:

Hot water, salt, sugar, oil, yeast and bread flour (all-purpose will work fine as well)

Pizza sauce (Contandina Pizza Squeeze is our favorite), cheese, and any toppings you want (I know, we’re boring – but use whatever you like!)


In a large bowl, stir together hot water, salt, sugar, oil and yeast. Add flour, one cup at a time, until dough is soft by not sticky. Cover dough and allow to rise until doubled (about 1/2 hour). I “cheat” and throw all the ingredients in my bread maker and run a dough cycle – then I walk away and find something else to do until it’s done!


Punch dough down. Pinch off pieces of dough about the size of a large egg. Roll into an oval/rectangle.

Spread sauce on half of the dough, then place desired toppings.

Fold the remaining half of dough over the toppings; pinch dough closed. Paint with egg wash. Cut 2-3 smalls slits in top of the calzone to vent. Place on a cookie sheet that is lightly greased or lined with parchment paper. Bake at 400 degrees for 15 minutes or until golden brown.

Serve with marinara sauce and/or ranch for dipping. Enjoy!Calzones

  • 2 Tbsp. sugar
  • 4 Tbsp. oil
  • 4 to 4 1/2 cups flour
  • 2 Tbsp. active dry yeast
  • Sauce, cheese & toppings
  • Egg Wash: 1 egg + 1 Tbsp. oil, mixed

Instructions

  2. Cover dough and allow to rise until doubled (about 1/2 an hour).
  3. Punch dough down.
  4. Pinch off pieces of dough about the size of a large egg. Roll into an oval or rectangle.
  5. Spread sauce on half of dough, then stuff with desired toppings. Pinch dough closed.
  6. Paint with egg wash.
  7. Cut 2-3 small slits in top of calzone to vent.
  8. Place on a cookie sheet that is lightly greased or lined with parchment paper.
  9. Bake at 400 degrees for 15 minutes or until golden brown.
