Sweet and Sour Meatballs ~ Easy Dinner!

I’ve been on a meatball-kick, lately.  Did you see those meatballs in the Slobber-Fest on Sunday?  Yum!  So, while browsing Our Best Bite’s cookbook, I stumbled on these Sweet and Sour Meatballs.  I knew I needed them in my belly.  The recipe has instructions for both the meatballs and the sauce.  But, since I was feeling unmotivated, I used frozen meatballs and just made the sauce.  Dinner was literally ready in fifteen minutes.  Just how I like it.  The meal was scrumptious!  Maybe when I’m feeling perky, I’ll make the meatballs from scratch.  It seems pretty easy…sounds like it would only take an extra 15 minutes.  Like I said, I was feeling lazy.


So, to make the sauce you whisk together 3/4 cup brown sugar, 3 TBS. flour, 1 1/2 cups pineapple juice, 1/4 cup white vinegar, and 3 TBS soy sauce.  Bring to a boil, then keep warm until your meatballs are done.

Heat up your meatballs (I just microwaved them).  Or, make them from scratch (recipe, below.)

Combine the sauce and meatballs, and serve on top of a bed of rice.  Easy!
Sweet and Sour Meatballs
Meatballs
1 lb. lean ground beef
2 TBS dehydrated onion
1/4 tsp. pepper
1 tsp. salt
1 egg, beaten
1/4 cup bread crumbs
Sauce
3/4 cup packed brown sugar
3 TBS. flour
1 1/2 cups pineapple juice
1/4 cup white vinegar
3 TBS. soy sauce
Directions: Heat your oven for broiling.  In a medium bowl, combine meatball ingredients.  Shape into 1 inch balls and place on a baking sheet lined with tin foil and sprayed with non-stick cooking spray.  Place under the broiler for 5 to 7 minutes or until the meatballs begin to brown.  In a large saucepan, whisk together the sauce ingredients and bring to a boil.  Add the meatballs and reduce heat, cover, and simmer for 20 minutes, stirring often.
