Oriental Chex Mix ~

I’ve had the munchies, lately.  Darn-it-all, I hate when that happens.  I think it’s all the snow we’ve had, these past few days…feeling a little cooped up, and bored.  Maybe it’s that my 3 year old said she didn’t like me, yesterday, and I’m trying to comfort myself.  Maybe it’s my intuition, telling me there is going to be some life disaster, and I need to store some body fat.  Or, it could just be that the stinkin’ Superbowl is coming up, and I know y’all want some fun and easy recipes.  Yep, that’s the one.

I’ve had this recipe for Oriental Chex Mix stashed away for some time now. I found it in a Pillsbury Bake-Off magazine, and thought it sounded like a fun variation of the traditional Chex Mix…which I love.  I added a tad more butter, more pretzels, and less chow mein noodles…to suit my taste.

Alright, to throw this together, you will need:  pretzel sticks, chow mein noodles, Wasabi peas, salted peanuts, Corn Chex, Oriental Ramen seasoning, butter, soy sauce, and garlic powder.

Heat the oven to 250 degrees.  Grab a big bowl, add 4 cups Corn Chex, 4 cups Bugles, 1 cup chow mein noodles, 2 cups pretzel sticks, and 1 cup of peanuts.  Stir together.

To prepare the seasoning, combine 8 TBS melted butter, with 1 tsp. garlic powder, 2 TBS. soy sauce, and 1 pkg of the seasoning, removed from a package of Oriental Ramen Noodles.  Mix well and pour over the dry ingredients.  Stir together.

Spread the seasoned mixture into a sheet pan at bake at 250 for about 50 minutes.  Shuffle/stir the ingredients around, half way through the cooking time.

After it cools, dump it into a serving bowl, and mix in a handful, or so, of Wasabi peas.  You can usually find Wasabi peas in the Oriental section of your grocery store.  I found mine at Wal-Mart.  FYI, they’re pretty dang spicy.  At least, the ones I had were.  But, they added a nice kick and a little color.

Oriental Chex Mix

4 cups Corn Chex cereal
4 cups Bugles, original
1 cup chow mein noodles
2 cups pretzel sticks
1 cup salted peanuts
8 TBS. butter, melted
1 tsp. garlic powder
2 TBS. soy sauce
1 pkg. oriental flavor Ramen Noodles seasoning (not the noodles, just the seasoning)
1 cup Wasabi peas

Directions:  Heat oven to 250 degrees.  In a large bowl, stir together the Corn Chex, Bugles, chow mein noodles, pretzels, and peanuts.  In a small bowl, combine the melted butter, garlic powder, soy sauce, and oriental seasoning.  Stir well, then pour over the dry mix, stir together.  Dump the seasoned mixture into a sheet pan.  Bake for about 50 minutes.  At about 25 minutes, shuffle/stir the mixture around on the pan, and cook for the remaining time.  Let cool, dump in a large bowl, and stir in some Wasabi peas.

      Ha!  Ya, I’m not worried.  She got upset because I took the iPad away from her…looks like I need to take it away from her more often!
