I’m Karen, a SAHM trying to answer one of life’s most mysterious questions…what is for dinner?
In January 2009, I set out on an interesting journey. I decided to see if I could cook 365 different slow cooker recipes in 365 days. I did it without any repeats! I have done everything from main dishes, sides, desserts, breakfasts and breads. I rate all the recipes and let you know if they’re worth cooking up. Since finishing my project I’ve been able to do a lot of media appearances and I’ve put together a cookbook of all my best recipes. I also continue to update my blog a few times a week with new and improved slow cooker recipes.
The slow cooker is a wonderful appliance that can give you the freedom to cook dinner at any time but dinner time (which is often the most busy and crazy time of the day). It frees your mind so you don’t have to think “what am I going to make for dinner” all day long. Because my blog is all about slow cooking, it’s all about recipes that are (hopefully) 1. Easy 2. Tasty 3. Budget-friendly. Also, I am not a chef. I’m the anti-chef. I have a life other than cooking dinner…so I try to make my recipes something that you can put together in a few minutes (with as few dishes to clean up as possible). I am also not a photographer or a food stylist. I try to make the things I’m photographing look nice but, give me a break, I’m starving and I’m not going to spend an hour trying to make things look perfect. If you want to look at beautiful pictures of food, this is not necessarily the best blog to look at. I’m about practical and functional, functional and practical!!!

This is one of my favorite pasta dishes. The sauce has great flavor thanks to the bell peppers, lime juice and red onion. It is creamy and comforting. I also like the use of the spinach fettuccine it adds some color and some fiber. I hope you enjoy this slow cooker dish as much as I did!
Lime Chicken and Peppers
Makes 4-6 servings
2 boneless, skinless chicken thighs
2 boneless, skinless chicken breast halves
2 garlic cloves, minced
½ C. chicken broth
4 Tbsp. lime juice, divided
3 Tbsp. soy sauce
½ medium red onion, finely diced
1 each red, green, orange, and yellow
pepper, cut into long strips
¼ C. butter
½ C. flour, divided
1 C. half-and-half (or whole milk)
1 lb. spinach fettuccine noodles, cooked and drained
Cilantro for garnish
1. Cut each chicken thigh and breast into 4 pieces. Put chicken in slowcooker.
2. Combine garlic, broth, 2 Tbsp. lime juice, soy sauce, chicken, red onion,
and pepper strips in slow-cooker. Stir to coat chicken.
3. Cover and cook on LOW for 3–4 hours.
4. In a large skillet, melt butter over low heat. Sprinkle in ¼ C. flour and stir
with wire whisk. Slowly add in half-and-half or milk and stir with whisk.
5. Remove about ½ C. liquid from the slow-cooker and add to the skillet.
Whisk in remaining ¼ C. flour and stir until creamy.
6. Add 2 Tbsp. lime juice to the skillet.
7. Pour the rest of the contents from the slow-cooker into the skillet and stir
to combine. Stir in cooked pasta until it is all coated with sauce.
8. Garnish with cilantro and serve.
