Nutty Craisin Chew
  • 2 to 3 cups each of chopped raw almonds and roasted cashews
  • 2 cups chopped Craisins
  • 2 cups chopped dried apples
  • 2 cups sugar (or 1 cup brown and 1 cup white)
  • 1 cup light Karo
  • ½ cup water
  • 1 teaspoon vanilla
  1. Coarse chop the nuts and fruits. Combine in large metal or glass bowl. Set aside.
  2. In large saucepan combine sugar, Karo and water. Stir well and bring to boil over medium heat. Cook to soft ball stage or 228 to 230 degrees.
  3. Remove from heat and stir in vanilla.
  4. Quickly pour over the fruit, nut mixture and stir to combine well.
  5. Dump onto a parchment lined baking sheet and press down with a piece of parchment paper to ¾" thick.
  6. Cut into squares while still warm.
