Corn Salad
Serves: 6 servings
A quick and easy salad made with frozen corn!
  • 10 ounces frozen corn
  • 1 small red onion, diced (about 1 cup)
  • 1 red pepper, diced (about 1 cup)
  • 2 Tablespoons fresh parsley, minced
  • ¼ cup Ranch dressing.
  1. Put frozen corn in a mixing bowl. Let sit at room temperature for a few minutes so corn begins to thaw.
  2. Add onion, red pepper, and parsley.
  3. Add Ranch dressing. Mix.
  4. Serve right away or cover and refrigerate for later.
