BBQ Chicken Salad
Recipe type: Dinner Salad
Mixed greens topped with bbq chicken, cherry tomatoes, corn, avocado, cucumbers, black beans, and any other favorite toppings. Top it with a creamy bbq ranch dressing and you have a delicous and satisfying lunch or dinner.
  • 1 pound boneless, skinless chicken, grilled and sliced
  • ¼ cup barbecue sauce
  • Cherry tomatoes, cut in half
  • black beans, drained and rinsed
  • Sweet corn
  • Cucumber, peeled and diced
  • Green onion, thinly sliced
  • Colby jack or Pepper Jack cheese, cut into small cubes
  • Bell pepper (any color), diced
  • Mixed greens
  • Cilantro
  • For the dressing:
  • 1 cup ranch dressing
  • 2 Tablespoons barbecue sauce
  1. To make the dressing, combine 1 cup ranch dressing with 2 tablespoons bbq sauce. Toss grilled chicken in ¼ cup bbq sauce. Assemble salads beginning with greens then adding all desired toppings and finishing with the dressing. Once dressed, serve immediately.
