12ouncesangel hair pastacooked al dente (or any other pasta, zoodles, or spaghetti squash)
Cooked meatif desired for making meat sauce - chicken, ground beef, ground sausage, sliced smoked sausage
Parmesan cheesefor serving
Instructions
Preheat oven to 350. Line a rimmed baking sheet with foil and spray it lightly with cooking spray. Lay tomatoes, onion, and garlic slices on sheet. Drizzle lightly with olive oil and sprinkle generously with salt and pepper. Bake in preheated oven for 30-40 minutes.
When done roasting, put roasted vegetables and basil in vented blender and blend until smooth. If consistency is too thin, simmer in a saucepan until desired consistency is reached. Add your favorite meat to the sauce and serve immediately over cooked angel hair pasta (or substitute). Sprinkle with parmesan cheese for serving.
