Delightful Snacks ~ The Healthiest Cookie I Have Ever Made

Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup ground flax seed
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cardamom
  • 1/2 cup butter room temp.
  • 1/2 cup sugar or Xylitol
  • 2 eggs
  • 1/2 cup honey
  • 1 tsp. vanilla
  • 1 apple peeled and chopped
  • 1/2 cup dried plums chopped
  • 1/2 cup dried apricots chopped
  • 1 cup walnuts chopped
  • 1 1/2 cups coconut
  • 3 cups oats old fashioned
  • 1/4 cup applesauce

Instructions

  1. Heat oven to 350 degrees.
  2. In a bowl, combine your dry ingredients: flour, flax seed, baking soda, salt, cinnamon, nutmeg, cardamom, and oats.
  3. In a mixer, combine butter and sugar.
  4. Add the honey, eggs, and vanilla. Mix well.
  5. Chop your fruit, set aside.
  6. Add the dry ingredients to the mixer, mix well.
  7. Add the fruit, walnuts, and applesauce. Mix.
  8. Drop by heaping spoonfuls onto a sprayed cookie sheet.
  9. Bake for about 14 minutes.
