Pecan Blondies with Browned Butter Frosting

Ingredients

  • Bars:
  • 1 cup sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup butter softened
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chopped pecans
  • Frosting:
  • 2 TBS butter
  • 2 cups powdered sugar
  • 1/2 tsp vanilla
  • 2 to 4 TBS milk

Instructions

  1. Heat oven to 350 degrees.
  2. Grease a 9x13 pan.
  3. In a large bowl, combine sugar, brown sugar, and 1/2 cup butter. Beat until fluffy.
  4. Add 1 tsp. vanilla and eggs, blend.
  5. In a separate bowl, combine flour, baking powder, and salt. Stir. Add to sugar mixture.
  6. Stir in 1/2 cup chopped pecans.
  7. Bake for about 15 minutes, or until toothpick inserted in center comes out clean.
  8. Let cool.
  9. Once cooled (about an hour), make the frosting by heating 2 TBS butter in pan over medium heat. Heat until the butter turns a light golden brown.
  10. Remove from heat.
  11. Stir in powdered sugar, vanilla, and enough milk to make the frosting spreadable. Blend
  12. Spread frosting over cooled bars.
  13. Cut into squares and place pecan half in the middle of each.

Recipe Notes

High altitude (according to Pillsbury, haven't tried.): increase flour to 1 3/4 cup, decrease white sugar to 1/2 cup.
