Summery Blackberry Cobbler

Ingredients

  • 2 cups fresh blackberries
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 stick 4oz unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup milk I use skim milk
  • Vanilla ice-cream or whipped cream to serve or both!

Instructions

  1. First, lightly grease your baking dish (I use a 9-inch pie dish) and preheat your oven to 350 deg F.
  2. Then, combine the flour, baking powder and 3/4 cup of sugar in a mixing bowl.
  3. Pour in the melted butter and milk, and whisk together until you have a smooth, creamy mixture.
  4. Pour the mixture into your prepared baking dish, and distribute the blackberries over the batter evenly.
  5. Sprinkle the whole thing with the remaining 1/4 cup of sugar, then bake for about an hour, or until the cobbler has baked through and the blackberries are juicy!
  6. Cool for a couple of minutes, then serve with vanilla ice-cream or whipped cream!
