Ingredients

  • 1 1/4 cups flour
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/4 cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • pinch of salt
  • 2 cups chopped frozen cheesecake

Instructions

  1. Preheat oven to 200 degrees.
  2. Pulse the flour, buttermilk, egg, vegetable oil, sugar, baking powder, baking soda, and salt in a blender until smooth. Transfer to a bowl and stir in the cheesecake chunks (leave them as chunks.)
  3. Spray a large nonstick pan with cooking spray over medium heat. Pour batter into pan until desired pancake size. Cook until bubbly on top, about 4 minutes, then flip and cook until other side is golden brown.
  4. Serve with your topping of choice... strawberry sauce, blueberry sauce, caramel sauce, chocolate, etc.
