BBQ Chicken Salad

Mixed greens topped with bbq chicken, cherry tomatoes, corn, avocado, cucumbers, black beans, and any other favorite toppings. Top it with a creamy bbq ranch dressing and you have a delicous and satisfying lunch or dinner.
Course Dinner Salad


  • 1 pound boneless skinless chicken, grilled and sliced
  • 1/4 cup barbecue sauce
  • Cherry tomatoes cut in half
  • black beans drained and rinsed
  • Sweet corn
  • Cucumber peeled and diced
  • Green onion thinly sliced
  • Colby jack or Pepper Jack cheese cut into small cubes
  • Bell pepper any color, diced
  • Mixed greens
  • Cilantro
  • For the dressing:
  • 1 cup ranch dressing
  • 2 Tablespoons barbecue sauce


  1. To make the dressing, combine 1 cup ranch dressing with 2 tablespoons bbq sauce. Toss grilled chicken in 1/4 cup bbq sauce. Assemble salads beginning with greens then adding all desired toppings and finishing with the dressing. Once dressed, serve immediately.
