Bacon and Egg Breakfast Muffins

These muffins are so moist and flavorful. Plus, they have a whole egg cooked right in the middle! They're family friendly and easy enough for kids to make (mine made them in their cooking class.) * These work best in oversized muffin tins!

Ingredients

  • 4 oz. Bacon
  • 4 Green Onion
  • 1 cup Grated Cheese
  • 1 1/4 cup Flour
  • 1 tsp. Baking Powder
  • 1/4 tsp. Baking Soca
  • 1/2 cup Buttermilk
  • 1/2 tsp. Salt
  • 1 TBS Sour Cream
  • 2 TBS oil
  • 5 eggs
  • 1 TBS butter melted

Instructions

  1. Heat oven to 350 degrees.
  2. Spray muffin tin with non-stick spray.
  3. Cook bacon and crumble (I love Costco's frozen pre-cooked bacon!)
  4. Chop green onions and grate cheese
  5. In a bowl, mix the flour, baking powder, and baking soda.
  6. In a separate bowl, mix the buttermilk, salt, sour cream, oil, and 1 egg.
  7. Add dry ingredients to wet ingredients and stir together.
  8. Fold in the bacon, onions, and cheese.
  9. Place one scoop of batter in the bottom of an oversized muffin tin.
  10. Make a divot in the batter and crack one egg per muffin tin.
  11. Cover the egg with another scoop of batter.
  12. Brush tops of muffins with melted butter.
  13. Bake for 20 to 25 minutes.
