Overnight Chocolate Waffles with Strawberry Syrup (she: Jana)

Ingredients

For the pancakes:

  • 2 1/4 cups flour
  • 2 tablespoons sugar
  • 1 teaspoon yeast
  • 2 eggs
  • 1 3/4 cup milk
  • 1/4 cup butter
  • 1 cup mini semi-sweet chocolate chips divided

For the syrup:

  • 2 cups pureed strawberries
  • 1/2 cup sugar

Instructions

For the pancakes:

  1. In your blender combine flour, sugar and yeast.
  2. Put butter and 1/2 cup of chocolate chips in a microwave safe bowl and melt in microwave at 30 second intervals until smooth.
  3. Now add the eggs and milk in the blender with the flour mixture. Blend until combined and smooth. Cover and place in fridge for up to 24 hours.
  4. In the morning heat up your waffle iron. While it is warming up, fold the rest of the chocolate chips into the batter. Cook according to your waffle maker's instructions.

For the syrup:

  1. Puree strawberries in your blender until smooth, let it go for 3-4 minute.
  2. Add sugar and mix to combine.
  3. Pour over waffles, pancakes, ice cream, or whatever else you can think of. Or you can put it in plastic freezer containers and freeze for future use.
