Mom’s #1 Frosted Brownies (she: Jana)

Ingredients

For the brownies

  • 1 cup butter 2 sticks
  • 8 ounces bittersweet chocolate
  • 5 eggs
  • 3 cups sugar
  • 1 tablespoon vanilla
  • 1 teaspoon kosher salt
  • 1 1/2 cups flour
  • 1/2 cup semisweet chocolate chips
  • 1 cup chopped walnuts optional

For the frosting

  • 2/3 cup 1 1/2 sticks butter, softened
  • 1/2 cup unsweetened cocoa
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 4-5 tablespoons milk

Instructions

For the brownies:

  1. Preheat oven to 350 degrees. Line a 9 x 13 inch pan with tinfoil. Lightly grease tinfoil with cooking spray.
  2. Put butter and chocolate broken into pieces into a large microwave safe bowl. Microwave on high for 30 second intervals stirring in between until melted and smooth. Set aside.
  3. In your mixer beat eggs, sugar and vanilla until light and fluffy, 3-5 minutes, scrapping sides and bottom of bowl half way through. Turn mixer on low and slowly add melted chocolate; beat until combined.
  4. Add the flour and salt. Mix until just combined. Mix in chocolate chips and walnuts, if desired.
  5. Pour batter into your prepared pan.
  6. Bake for 45-50 minutes or until a toothpick inserted comes out slightly moist. Remove from oven and let sit until cooled.

For the frosting:

  1. Cream together butter and cocoa powder. Scrape sides and bottom of bowl.
  2. Add powdered sugar, vanilla and 3 tablespoons of the milk. Beat until combined.
  3. Add more milk to desired consistency.
  4. Spread over cooled brownies.
