Peanut Butter Chocolate & Banana Chip Granola

  • 3 cups old fashioned oats
  • ¾ cup sliced almonds
  • ¼ cup flaxseeds
  • ¼ cup maple syrup
  • 1/3 cup peanut butter
  • 2 tablespoons molasses
  • ¼ cup brown sugar
  • 1 teaspoon vanilla bean paste or vanilla extract
  • ½ cup dark chocolate chips
  • 1 cup banana chips chopped

  1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oats, almonds and flax seeds. In a medium saucepan set over medium heat, combine the maple syrup, peanut butter, molasses and brown sugar. 3. Spread granola evenly on baking sheet. Bake for 30 minutes, tossing every 10 minutes until oats are golden brown.
  4. Cool mixture completely on wire rack. Mix in chocolate chips and banana chips.
  5. Store in an airtight container at room temperature.
