Mushroom Soft Tacos
Ingredients

soft tortillas
I used whole wheat
3
c.
fresh spinach
2
Tbsp.
olive oil
2
cloves
minced garlic
10
oz.
sliced baby bella mushrooms
1/2
large vidalia onion
sliced
1
tsp.
kosher salt
1
tsp.
dried sage
1/2
c.
fresh shaved Parmesan cheese
Instructions
Heat olive oil over medium heat; add minced garlic, mushrooms, onion, salt, and sage.
Saute until vegetables are tender.
Fill each tortilla with 1/2 c. spinach; top with sauteed vegetables.
Sprinkle with cheese and enjoy!
