Hey, friends! It’s Cathy from Lemon Tree Dwelling….back again to share some yumminess with you! I’m sure I’m not alone when I say I CAN’T BELIEVE summer is over! It seriously flew by….and I must say….now that fall is here I’m not sure I’m exactly ready!

Don’t get me wrong…..I’m definitely excited for the kids to be back in school and for our lives to have a little more structure. I’m excited for them to get to know their new teachers and meet some new friends and get back into all their activities. And I’m more than excited to have a little more time to myself!

But. Back to school means back to a busy schedule. And less time than ever to make (and eat) dinner together as a family! Which is exactly where this recipe for delicious Mushroom Soft Tacos comes in.

Mushroom Soft Tacos -  a quick, easy, healthy family dinner!

It’s simple to make, quick to eat, and so easy to enjoy! And if your family is up for it, it’s definitely the kind of meal you can easily add other veggies to….which is always a win! I’m crossing my fingers for a great start to the school year for all of us (and all of you)! At least we have one dinner covered.

Mushroom Soft Tacos

Ingredients

  • 6 soft tortillas I used whole wheat
  • 3 c. fresh spinach
  • 2 Tbsp. olive oil
  • 2 cloves minced garlic
  • 10 oz. sliced baby bella mushrooms
  • 1/2 large vidalia onion sliced
  • 1 tsp. kosher salt
  • 1 tsp. dried sage
  • 1/2 c. fresh shaved Parmesan cheese

Instructions

  1. Heat olive oil over medium heat; add minced garlic, mushrooms, onion, salt, and sage.
  2. Saute until vegetables are tender.
  3. Fill each tortilla with 1/2 c. spinach; top with sauteed vegetables.
  4. Sprinkle with cheese and enjoy!

    These are great, Cathy! Mushrooms are AWESOME. I love people that don’t like mushrooms, so I can steal them off their plate! Ha. The best kind of friends to have. 🙂
