Combine the butter, honey, brown sugar and sugar in a large microwave safe bowl.

Microwave on high for 3 minutes total, stopping to stir the mixture after each minute.

Add the vanilla, cinnamon, cream of tartar and salt. Stir to combine.

Add the oats and stir until combined.

Add the flour and stir until completely combined.

Firmly press the mixture evenly into a greased 8x8 inch pan.

Immediately, while they are still warm, top with white chocolate chips. You can either sprinkle them randomly or place them in rows like in the photos above.

Place in the fridge for at least 2 hours to allow the bars to set up.

Cut into desired size bars. I usually get about 10-12 bars.

Individually wrap each bar in plastic wrap and store in an airtight container or Ziploc bag. They can be stored at room temperature for up to 1 week, in the fridge for up to 1 month or in the freezer for up to 3 months. Enjoy!
