Cook up your roll of sausage. When it's done, remove the sausage and place it in a bowl. Set aside.

Melt butter in with the remaining grease from the sausage (there usually isn't much). If you like onions, you can add them now and cook until translucent.

After the butter is melted (and onions are cooked, if using), whisk in flour. Let cook for a minute, while stirring, over medium heat.

Pour in milk, stir continuously and bring to a boil. Once boiling, reduce heat to low.

Stir in the sausage and salt & lots of pepper (to taste).

Bake your biscuits. Split biscuits open and smother with hot gravy.
