Hands down, my favorite breakfast in the WHOLE world is Biscuits & Gravy. Oh, mama. That with a hefty pile of scrambled eggs, and I’m a happy girl. But, I’m a little bit gravy-picky, among other things. I mean, I’ll take what I can get, but give me good gravy and I’m devoted for life. Let’s go over a few…biscuits & gravy at Carl’s Jr., crappy. Biscuits & gravy at Chick-fil-A, crappy. Dylan’s or Warren’s, pretty good. Jeremiah’s in Ogden, Utah (the inspiration behind my favorite pancakes), awesome. Homemade Biscuits & Gravy (without the mix packet)…awesome. Just ask me, I know. It’s a self-imposed rule, I must try the Biscuits & Gravy EVERYWHERE that has them.
Anyway, Christmas is coming and we usually have the in-laws over for Christmas breakfast. This year, I’m thinking of giving myself a present and making biscuits and gravy for breakfast. Of course, with the usual scrambled eggs, hash browns, and maybe some fresh fruit.
For this recipe, all you need is milk (1% or 2%), flour, butter, 1 lb roll of breakfast sausage, salt, pepper, and biscuits. Of course, you can always make homemade biscuits, but since they’re being smothered in gravy AND it’s easier, I like to go with the Pillsbury Grands Biscuits.
Cook up your roll of sausage. I just used Jimmy Dean Regular.
When it’s done, remove the sausage and place it in a bowl. Set aside. Melt 5 TBS of butter in with the remaining grease from the sausage (there usually isn’t much). If you like yucky onions, you can add them now and cook until translucent. After the butter is melted (and onions are cooked, if using), whisk in 2/3 cup of flour. Let cook for a minute, while stirring, over medium heat.
Pour in 5 cups of milk, stir continuously and bring to a boil. Once boiling, reduce heat to low. Stir in the sausage and salt & lots of pepper (to taste.) Like I said earlier, this is yummy served with eggs and hash browns.
Don’t forget to make your biscuits!
Split the biscuits, drench with gravy, and let the good times roll.

Ingredients
- 1 lb pork breakfast sausage I use Jimmy Dean Regular
- 2/3 cup all purpose flour
- 5 TBS butter
- 5 cups milk not skim or fat free plus additional if needed
- Salt and freshly ground black pepper
- Optional: 1 medium onion diced
- Biscuits homemade or ready-to-bake
Instructions

Cook up your roll of sausage. When it's done, remove the sausage and place it in a bowl. Set aside.

Melt butter in with the remaining grease from the sausage (there usually isn't much). If you like onions, you can add them now and cook until translucent.

Stir in the sausage and salt & lots of pepper (to taste).

Bake your biscuits. Split biscuits open and smother with hot gravy.

Biscuits & Gravy is my husband’s favorite. I usually just use the Country Gravy packets. I’m so lazy sometimes!
