Summer Muffins ~ (…orange, banana, & poppy seed…)

Ingredients

  • 2 Cups flour
  • 1 TBS. poppy seeds
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 ripe bananas pureed
  • 1 egg
  • 3/4 Cup sugar
  • 1/4 cup oil
  • 3 tsp. orange zest
  • Glaze:
  • 1 1/2 Cups powdered sugar
  • 1/4 Cup orange juice 1 squeezed orange
  • 1 tsp. orange zest
  • 1 tsp. vanilla

Instructions

  1. Heat the oven to 375 degrees.
  2. Line a muffin tin with 12 cupcake liners.
  3. In a medium bowl, combine flour, poppy seeds, baking powder, and salt.
  4. In another medium bowl, smash/puree bananas, add egg, sugar, oil, and orange zest (grated). Mix well.
  5. Pour the flour mixture in and combine everything together.
  6. Spoon the batter into the muffin cups and bake for about 20 minutes.
  7. Meanwhile, make the glaze. Stir together powdered sugar, orange juice (just squeeze an orange), orange zest, and vanilla.
  8. When the muffins are done baking, poke some holes in the top with a fork and then drizzle the glaze over the top.
