I tell you what…summer is wearing me right out. Is it over yet?? I tend to think of myself as a homebody. I like to get out and do things, but I also super-love being home and having a routine. Lucky for me, I married a man who loooooooves to play! Because of him, we do endless fun things…every single-dingle weekend. I love him, but I’m tired. I’m starting to crave the Utah snow that keeps me cooped up and cuddling in my home. Ahhh…to stay home, relax, drink hot chocolate, read a book, and just do my normal mommy stuff. I get whisked away just thinking about it! But, alas…we have to squeeze in a few more weeks of summer fun, because its still as hot as ever out here. So, excuse me if I look/write/act like a walking zombie. That’s pretty much what I am.
Slight change of subject…
I just finished nursing my little Joey, so I’m happy and sad to say that I started my hardcore post-pregnancy diet. Blah! Ugh! Poop! But, I sure can’t wait to fit into my pants again. So, in preparation for my diet, I’ve been eating like total crap for the past week…making sure to address every single craving I might have in the next month. I had biscuits and gravy, cake, chocolate, smoothies, Lucky Charms, and muffins. Yes, muffins. Summer Muffins, to be exact…because summer is still on my mind and muffins are why I can’t wear my jeans. These muffins are a yummy concoction of bananas, oranges, and poppy seeds…with a juicy glaze drizzled on top.
Alright, so you heat the oven to 375 degrees. Line a muffin tin with 12 cupcake liners. In a medium bowl, combine 2 cups flour, 1 TBS poppy seeds, 2 tsp. baking powder, and 1/2 tsp. salt.
In another medium bowl, smash/puree 2 ripe bananas, add 1 egg, 3/4 cup sugar, 1/4 cup oil, and 3 tsp. orange zest (grated). Mix well. Pour the flour mixture in and combine everything together.
Spoon the batter into the muffin cups and bake for about 20 minutes.
Meanwhile, whip up a glaze to drizzle on top. Or, in my case…dump on top…cause that’s how I liked it. Stir together 1 1/4 cups powdered sugar, 1/4 cup orange juice (just squeeze an orange), 1 tsp. orange zest, and 1 tsp. vanilla. When the muffins are done baking, poke some holes in the top with a fork and then drizzle the glaze over the top. Enjoy your summer muffins!

I’ve been doing HCG. Its lots harder than a carb-free diet, but the nice thing is that you do it only for a few weeks and lose lots of weight. I’m just trying to lose those last stubborn 10 pounds. Lots of people swear by HCG, lots of people diss it. So, one of these days I’ll bust out a post, likely controversial. Thanks for commenting!
