Strawberry Colada Cupcakes (she: Jana)

HAPPY VALENTINES DAY everyone! It’s Jana from Double the Deliciousness and I’m so excited to be joining you again this month and that I get to post here on Valentine’s Day! It’s one of my favorite holidays. I love LOVE! It’s such a perfect time to show that someone special in your life how much you love them. And it’s a great holiday to show love to your children, Grandparents, teachers, classmates, aunts, uncles, cousins, neighbors, strangers on the street, the crazy lady that sings on the corner….and it goes on and on!

The world could use a little more LOVE, and a good cupcake! And I’ve found a great cupcake that everyone will love and is perfect for Valentine’s Day (or any other day matter of fact!). Check out my easy recipe for Strawberry Colada Cupcakes!

Strawberry Colada Cupcakes (she: Jana) READY!

Ingredients

• Cupcakes:
• 1 box white or vanilla cake mix
• 3 eggs
• 1/3 cup oil
• 1/3 cup sour cream
• 1/2 cup coconut milk
• 1/2 cup buttermilk
• 1 tablespoon coconut extract
• Strawberry Buttercream Frosting:
• 1 cup butter softened
• 4 cups powdered sugar
• 4 tablespoons strawberry jam
• Flaked Coconut for top

Instructions

1. Preheat oven to 350 degrees.
2. Line 24 muffin tins with liners.
3. Mix all cake ingredients together in mixer until smooth.
4. Put batter into liners about 2/3's full.
5. Bake for 17-20 minutes or until toothpick inserted comes out clean.
6. Set aside and let cool completely.
7. For buttercream, beat butter until smooth.
8. Add the powdered sugar and jam and mix until combined.
9. Pipe onto cooled cupcakes.
10. Place coconut in a bowl and then roll the frosting in the coconut.

And just because I love to embarrass my husband (it is Valentine’s Day after all…I do it because I love him!) here’s his Valentine’s Day Card for his students.  He’s been doing this for the past few years and the kids absolutely love it!  Isn’t he so cute!!!!????  Although I do hate covering those gorgeous eyes of his!
