One of my favorite things about summer is when the ripe strawberries come to Costco. I love buying those big containers and munching on fresh strawberries all day long. Mmmmm! I just love those darn things. So, while the husband was away at Scout camp, this past week, I had my little sister over to keep me company. We medicated my loneliness by painting our nails, going out to eat every day, dancing in the driveway (did you see our Instagram pics?), and scarfing Strawberry Cupcakes with Strawberry Cream Cheese Frosting at midnight. Good times. We obsess over these cupcakes and they’re perfect for using up some of your Costco strawberries. They’re also perfect for loneliness.
This recipe has been adapted from Paula Deen’s. Enjoy!
Strawberry Cupcakes with Strawberry Cream Cheese Frosting
Ingredients
- Cake:
- 1 box of white cake mix
- 1 3oz box of strawberry instant gelatin
- 1 16 oz bag frozen strawberries, pureed (Set aside 1/4 C. for frosting)
- 4 large eggs
- 1/2 C. canola oil
- 1/4 C. water
- Frosting:
- 1/4 C. butter softened
- 1 8oz package cream cheese, softened
- 1/4 C. pureed strawberries
- 1/2 t. vanilla extract
- 4 C. powdered sugar
Instructions

Preheat your oven to 350 degrees.

Line cupcake pans with paper liners.

In the bowl of an electric mixer combine cake mix, gelatin, pureed strawberries, eggs, oil and water. Don't forget to set aside 1/4 c. of the strawberry puree for the frosting.

Fill cupcakes liners 3/4 full.

Bake for 15-18 minutes, or until a toothpick comes out clean. Let cool.

For the frosting, cream the butter and cream cheese until well combined.

Add the pureed strawberries, and vanilla extract.

Slowly add powdered sugar until you receive the consistency you like.

Frost your cupcakes, and enjoy!

Quick question, I plan on making this for my daughter’s birthday tomorrow and was wondering about the size of the cake box mix. I saw on Paula Dean’s original recipe that it calls for 18.25oz, which I’ve never seen before, and I bought a box with 15.25 oz. With that being said my box directions call for 3 eggs, whereas your recipe (as well as Paula’s) call for 4 eggs, does this make a difference?

I just use the standard cake mix boxes from the grocery store, probably the same size you have! And, I would do the 4 eggs, that’s what I’ve done and I love these cupcakes!

I don’t know what is going on. I made them, put them in oven for 18 minutes and they are not done. They have been in there for almost 30 now.

Did you figure it out? I don’t know why they wouldn’t be done! I make these fairly often and have never had a problem. Hope it turns out!
