Hello, dear friends! This is Maria from Shopgirl visiting again, and I have a blackberry cobbler recipe to share with you today! Since summer is officially here, it’s time for all those delicious summer desserts! Nothing says summer dessert to me like baking with fresh fruit. I look forward to ripe, juicy berries and wonderfully fragrant peaches all year! This blackberry cobbler is a great choice for a quick and easy, but utterly delicious summer dessert. You are definitely going to want to make this, because it is like summer in a bite (especially topped with a big scoop of ice-cream, of course).
INGREDIENTS
2 cups fresh blackberries
1 cup all-purpose flour
1 1/2 tsp baking powder
1 stick (4oz) unsalted butter, melted
1 cup granulated sugar
1 cup milk (I use skim milk)
Vanilla ice-cream or whipped cream to serve (or both!)
DIRECTIONS
First, lightly grease your baking dish (I use a 9-inch pie dish) and preheat your oven to 350 deg F. Then, combine the flour, baking powder and 3/4 cup of sugar in a mixing bowl (the original recipe calls for a cup of sugar here, so if you prefer a sweeter cobbler add in more, but I think it’s sweet enough with the 3/4 cup). Pour in the melted butter and milk, and whisk together until you have a smooth, creamy mixture. Next, pour the mixture into your prepared baking dish, and distribute the blackberries over the batter evenly. Sprinkle the whole thing with the remaining 1/4 cup of sugar, then bake for about an hour, or until the cobbler has baked through and the blackberries are juicy! Let cool for a couple of minutes, then serve with vanilla ice-cream or whipped cream!
