Yesterday was such a fun day for my little Caden. Fresh Living, on channel 2, invited him to come share one of his recipes. Who knew that being a picky eater could get you on tv?? Let’s keep that under wraps. Several of his favorites have been shared on this blog, already…Hamburger Gravy, Buffalo Chicken Pizza, and Dinner Rolls.
But, for the show he decided to share his favorite Taco Salad in Homemade Tortilla Bowls. It’s sooooo easy and looks pretty cool, too! You can watch the video, here.
So, first you just get all your fillings together…cooked taco meat (chicken, ground beef, pork, dog, etc.), lettuce, tomatoes, black olives, cheese, and dressing ingredients (ranch dressing and taco sauce). Then, you can make your bowls…this is really the easiest dinner. So, if you want to make small kiddie-sized bowls, you can use a jumbo muffin pan and 6″ tortillas. Or, if you want normal adult portioned bowls, you can use a Pyrex container, or any oven safe (cereal sized) bowl that you have.
On the show, we used regular cereal bowls to make the adult-size, with the large sized tortillas. Don’t tell…but, the bowls weren’t really oven-safe…but, we still used them AND they didn’t break. Sweet.
So, place your tortillas in the microwave for 30 seconds, or so. Just until they are warm and floppy. Then carefully press them down into your form, whatever it may be. Heat your oven to 350 degrees and place the tortillas in there for about 12 minutes. Let them cool in their form for a couple minutes before removing it.
To make the Spicy Ranch Dressing, just combine 4 parts ranch dressing to 1 part taco sauce. So, maybe 1 cup ranch and 1/4 cup taco sauce. Or, really…just do it however you want 🙂 Stir up and spoon on top of the salad.
This is one of those recipes, where it’s not really a recipe-recipe. It’s too easy. So, typing it in recipe form feels weird. But, we hope you love it!

In stead of bowls. I used foil balls. Crumple foil loosely and drape the tortilla over it and then bake.

I’ve heard of that too, great idea. Also, some people drape them over empty soup cans. I kinda liked the bowls for the “flower” effect.
