In honor or Jessica’s post about eating healthy foods (cabbage being one of them), and St. Patrick’s Day (I know it’s a stretch but cabbage IS green…) I thought I would share my recipe for Chinese Chicken Salad. And, I must say…I think this recipe is better than the similar ones out there. I like how its not as sweet….and more Chinesey, Chinesee, or Chinese-eeee. (You pick, since it’s not really a word.)
So, don’t be scared of the many ingredients. This recipe takes like 10 minutes to make…the only time hog is trying to find all this stuff in the store. Also, this makes a good portion and it is NOT good the next day (soggy) so make sure you’re able to scarf this down in one day. So, you need a thinger of cabbage, 2 cans of canned chicken, toasted sesame seeds, slivered almonds, green onions, 2 packages Oriental Ramen, sugar, rice vinegar, oil, sesame oil, soy sauce, salt, pepper, and the flavor packages from the Ramen.
So, wash and chop up your cabbage. I ended up using about 3/4 of the cabbage cause it was making so much.
Add all the salad ingredients in: 1 chopped cabbage, 2 cans of chicken (shredded), 2 TBS. toasted sesame seeds, 1/2 cup or more slivered almonds, 1/4 cup green onions (chopped), and 2 packages Ramen noodles (smashed up, and don’t add the flavor…just the noodles). Stir it up. If you are like me, realize that your bowl is too small and dump it into a larger one.
The dressing mixture is 4 TBS. sugar, 4 TBS rice vinegar, 1 cup oil, 2 TBS. sesame oil, 2 tsp. soy sauce, 1/2 tsp. salt, and 1/2 tsp. pepper, and 2 of the Oriental Ramen flavor packages.
Pour it on, mix it up, and chill. I like to pour extra soy sauce on mine when I eat it. But, this is TOTALLY healthy…great low carb meal, especially if you leave out the Ramen. But, what’s a little noodles? Enjoy.

- Salad:
- 1 chopped cabbage

- Dressing:

- 1 cup oil
- 2 TBS. sesame oil
- 2 tsp. soy sauce
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 of the Oriental Ramen flavor packages
Instructions

Combine the salad ingredients in a large bowl, mix together.

In a separate bowl, combine all the dressing ingredients.

Pour over top and stir. You don't have to use all the dressing, just use as much as you want.

This salad is only good the first day you make it, so eat up!
