Howdy! It’s Kathy from Beyond the Chicken Coop and I’m getting ready for grilling and picnic season! No matter what’s on your menu you always need some great side dishes to go along with the main course. This corn salad is one of my favorite go-to sides. It’s quick. It’s easy and it’s always a hit!
This dish only uses 5 ingredients: Frozen corn, red onion, red bell pepper, fresh parsley and dressing. The dressing is ranch dressing. Any kind will work; regular ranch, homemade ranch, jalapeno ranch, no-fat ranch, bacon ranch….you get the picture. You pick your favorite ranch dressing and add to the other ingredients. Voila! You have an absolute perfect side dish!
This corn salad is easy to double or even triple. I always plan for extra servings when we are eating outside. Everyone just seems to eat more when we’re gathered in the fresh air together. Plus this salad make great leftovers if there does happen to be any left.
- 10 ounces frozen corn
- 1 small red onion diced (about 1 cup)
- 1 red pepper diced (about 1 cup)
- 2 Tablespoons fresh parsley minced
- 1/4 cup Ranch dressing.
Put frozen corn in a mixing bowl. Let sit at room temperature for a few minutes so corn begins to thaw.
Add onion, red pepper, and parsley.
Add Ranch dressing. Mix.
Serve right away or cover and refrigerate for later.
