Hey, Everyone! It’s Cathy from Lemon Tree Dwelling here to share a simple and delicious fall recipe with you. I don’t know about you, but as soon as the leaves start to fall, my mind turns to all things pumpkin! Pumpkin bread, pumpkin lattes, pumpkin pie…..is there anything better at this time of year? I’ve been having a blast getting creative with pumpkin in my Lemon Tree kitchen….and I’m so excited to share this fun and festive recipe with you today!
There are some things that go particularly well with pumpkin…..like ginger…..and some things that go particularly well with everything…..like white chocolate! So, I thought, why not mix them all together!? And, since I love all types of candy bark, I thought it would be fun to make one specifically for fall. For all the pumpkin lovers out there!
This Pumpkin Gingersnap Bark is simple to make, ready in no time at all, and sure to be a hit at your next fall gathering! The spice of the gingersnaps is the perfect match for the sweetness of the white chocolate, and the end result is a crunchy, delicious, pumpkin-ginger flavored bark that is just screams fall! Pumpkin Gingersnap Bark

Pumpkin Gingersnap Bark
Ingredients
- 16 oz. white chocolate I used Vanilla Candiquik
- 2 c. crushed gingersnap cookies
- 30 Hershey's Pumpkin Spice Kisses
- 1 tsp. pumpkin pie spice
Instructions

Melt white chocolate and Pumpkin Spice Kisses over low heat smooth.

Stir in pumpkin pie spice and gingersnap cookies.

Spread mixture on large baking sheet lined with parchment paper.

Cool completely in refrigerator or at room temperature. Mixture will harden

Once hardened, break into irregular pieces. Store in an airtight container at room temperature.
