I love a simple slow cooker recipe. This Slow Cooked Pork Roast & Veggies is almost so simple, it’s not even a recipe-recipe. You stick a pork roast in the crock pot, add whatever veggies you like, a little soup, and you’re done. Let cook. If you want to jazz it up with herbs/spices, feel free. It’s your roast. I can’t imagine this ever being messed up. It’s hearty enough for a big family dinner on the weekend, yet easy enough for a busy weeknight meal.

Slow Cooker Pork Roast and Veggies
Ingredients
- 1 pork roast
- 1 onion cut into large pieces
- Cut veggies your choice: potatoes, carrots, mushrooms, etc.
- Herbs/Spices?? Your choice optional
- 1 10.5 oz. can Cream of Mushroom soup
Instructions

Add meat and veggies to crock pot.

Pour soup can over top.

Cook on low for about 8 hours or high for 4 hours.

If your veggies are cut thin, add them to the pot half way through the cooking time. If they're chunky, they're fine.
