I’m a huge fan of oatmeal, so any oatmeal recipe will quickly peak my curiosity.  I’ve had this recipe for Baked Banana Oatmeal kickin’ around the kitchen for a while now, just waiting for me to make it.  I tore it out of the Parent & Child magazine and had a hunch it would be perfect for my family.  And, it was!  …especially with the addition of chocolate chips.  It made plenty, was delish, and it’s always nice when I can serve everyone at once.  I was afraid it wouldn’t be enough, so I doubled the recipe.  But, it made tons!  I had an entire 9×13 pan filled and 6 ramekins.  So, we’ve been eating this for a couple days now.

Banana Oatmeal

Baked Banana Oatmeal

Prep Time 15 minutes
Cook Time 30 minutes

Ingredients

  • 4 1/2 cups rolled oats or quick cooking
  • 3/4 cup brown sugar
  • 1 1/2 cup milk
  • 3 TBS butter melted
  • 3 eggs
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 1 1/4 cups mashed ripe banana
  • 1/4 cup chocolate chips optional

Instructions

  1. Heat oven to 350 degrees.
  2. In a large bowl, mix all ingredients and stir well.
  3. Spread in a greased 9x13 pan or greased ramekins.
  4. Bake for 20 to 30 minutes, until set.
  5. Serve with milk poured over.
  6. Reheat in the morning for great leftovers!
