All I had to hear was Copycat IHOP Cheesecake Pancakes and I knew I needed to make them ASAP and get them in my belly. And, the idea of smothering them in strawberry or blueberry sauce takes this to a whole other level. Come to mama!!
IHOP could easily be renamed IHOT, International House of Torture, because it’s practically impossible to settle on one menu item. I want to order like 7 things, all for me. Torture! Hey all! Leesh & Lu here. I guess it might be a stretch to really call this a recipe, so let’s just call it dinner (or breakfast!) inspiration. This is one meal I will never tire of. I ate it at least 4x per week for 2+ years and always looked forward to it. You can customize the ingredients any way you’d like, and even try your hand at making your own english muffins some time!

Fresh blueberries and lemon are made for each other. Add them to a scone and you’ve got an amazing treat! And then to top it all off, I added a lemon glaze! Super Yummy!
So, this recipe for Bacon and Egg Breakfast Muffins actually came from my kiddos. They learned how to make it in their cooking class, and so far it’s been one of our favorite recipes that they’ve come home with! I loved how moist and cornbread-like they were and the southwestern flavor. My kids loved that a whole egg was cooked right in the middle.
