I can’t believe it’s almost Christmas!  It has really crept up on me this year.  I’m still scramblin’ to get all our shopping done.  Every year I have big dreams that I’ll have all the shopping done before December so that I can just enjoy the wonderful Christmas season, but that has yet to ever happen!!
I seem to have less time to bake too when I’m worried about shopping and making sure I have everything that we needed….which is not okay with me.  I love my holiday baking! (Check out some of my other favorite Christmas recipes on my blog!)
This is a recipe that my mom used to make growing up.  I changed it to fit my tastes (mom used to use that awful fruit that you put in fruit cake…gag…sorry mom!:)), a wonderful pecan streusel sounded like a winning combination to me.  I love this dough recipe.  It is so soft…don’t be frightened when you see all the sour cream in this one, that’s what makes this dough so wonderful!
This will be perfect for a quick morning breakfast/brunch on the big day or for those of you needing something to take to the neighbors last minute…here you go!
Candy Cane Streusel Coffee Cake

For dough:

2 cups sour cream
2 tablespoons yeast
1/2 cup warm water
1/4 cup butter or margarine, softened
1/3 cup sugar
1 teaspoon salt
2 eggs
6-7 cups flour

For streusel:

1 cup packed brown sugar
4 tablespoons flour
4 teaspoons cinnamon
1/4 cup butter or margarine, melted
1 cup chopped pecans


For glaze:
1 1/2 cups powdered sugar
1 teaspoon vanilla
4 tablespoons milk

maraschino and green cherries, for garnish
(green cherries found with the holiday baking supplies)

Dissolve yeast in water in mixer bowl.  Heat sour cream in the microwave for about 2 minutes, stirring every 30 seconds.  Add the sour cream, butter, sugar, salt, eggs and 2 cups of the flour to the yeast mixture.  Beat until smooth.  Mix in enough of the remaining flour to make dough easy to handle.  I usually use closer to 7 cups flour all together.  Let knead in mixer for 10 minutes, or knead on a well-floured board for 10 minutes.  Place dough in a greased bowl, cover and let rise until doubled, about 1 hour.

Heat oven to 375 degrees.

Make streusel by mixing all ingredients together; set aside.

Punch down the dough and divide into 3 equal parts.  Roll each part into a rectangle about 15 inches by 6 inches and about 1/4 inch thick or so.

Spread 1/3 of the streusel mix down the center of the rectangle.  Using a pizza cutter, cut slits down each side of dough.  Try to make equal slits on each side or you’ll come out lopsided.

Now just crisscross the strips over top the streusel mix.

Keep going until all the streusel is covered.  Tuck and pinch the dough at the end underneath.

Stretch the dough until it looks pretty uniform.  You don’t want fat parts and skinny parts.  Then curve it into a candy cane.

Place on cookie sheet that has been sprayed with cooking spray.  Bake in the oven for 15-20 minutes or until golden brown.

Remove from oven and allow to cool for about 10 minutes.  While it is cooling, mix together the glaze ingredients.  Place candy cane on wax paper and then drizzle the glaze over the candy cane.

Use your maraschino and green cherries to make a holly berry and place on candy cane.  I just cut the maraschino cherries in half and used 3 halves and then cut the green cherries into slices.  You can just put one on each candy cane or you could decorate the entire candy cane with holly.
