One of my favorite things about Summer is all the fresh produce. It’s even better because I can walk out to my back yard to get it! Unfortunately it’s taken forever for my tomatoes to ripen, so when those little buggers pop up, there’s no waitin’. We had a request for fresh salsa and guacamole, which also happen to be my lovers favorite appetizers. I have realized lately I never measure anything, so I apologize- but you really can’t mess this up…..taste as you go.
Your cast of characters: Tomatoes, onion, green peppers, jalapenos (or Serrano’s) cilantro, and lemon. (You can do everything according to your likes and dislikes with this recipe)

For the spices: Garlic Salt, cumin (whatever you do, DON’T leave out the cumin!) chili powder and black pepper.
Cut these beauties up, I like it chunky like pico de gallo, but I will blend half of it for the hubs.
Cut up your onion, green pepper and jalapenos. (Wearing rubber gloves is a great idea when doing this!)

Throw them in your bowl.

Chop the ceelantrro. (Roll yer r’s)

Add all of the spices according to your likes, and a few squeezes of lemon. Mix together and serve.

I’m warning you, it’s addicting.
Now for the cool, creamy mate. Guacamole. It’s also high in omega fats (good for you).
You will need 1-2 avocados, onion, sour cream, garlic salt and black pepper (not shown).

With a knife, cut squares into the avocado, and scoop out.
Add sour cream.

Lemon juice. This will help it from turning brown.
Grated onion. However much floats yer boat.

Mash it, add seasonings. Test. Good. Test again.

Serve in a martini glass for fun. Enjoy!

- lemon
- sour cream
- grated onion
- garlic
- salt
- black pepper
Instructions
