Hey there Or So She Says readers! It’s Jana from Double the Deliciousness. I’m so excited to bring you one of my favorite, easy and amazingly delicious breakfast recipes today. Overnight Chocolate Waffles….yes, you read that right! And to top that off (literally) I have some delightful freshly made strawberry syrup. Chocolate and strawberry; a match made in heaven.
These are so great for busy mornings, or lazy mornings in my case…I’m so NOT a morning person! I’d way rather stay up an extra 10 minutes to make the batter and then sleep in an extra 10 minutes! In the morning heat up your waffle iron and cook away. The strawberry syrup can be made ahead of time as well, and can also be frozen. So when you find some strawberries on sale, stock up and make a whole bunch of strawberry syrup to freeze. Trust me, you’ll want a lot! These would also be a great Easter morning breakfast. One your whole family will love!
Overnight Chocolate Waffles
2 1/4 cups flour
2 tablespoons sugar
1 teaspoon yeast
2 eggs
1 3/4 cup milk
1/4 cup butter
1 cup mini semi-sweet chocolate chips, divided
In your blender combine flour, sugar and yeast.
Put butter and 1/2 cup of chocolate chips in a microwave safe bowl and melt in microwave at 30 second intervals until smooth.
Now add the eggs and milk in the blender with the flour mixture. Blend until combined and smooth. Cover and place in fridge for up to 24 hours.
In the morning heat up your waffle iron. While it is warming up, fold the rest of the chocolate chips into the batter. Cook according to your waffle maker’s instructions.
Strawberry Syrup
2 cups pureed strawberries
1/2 cup sugar
Puree strawberries in your blender until smooth, let it go for 3-4 minute. Add sugar and mix to combine. Pour over waffles, pancakes, ice cream, or whatever else you can think of. Or you can put it in plastic freezer containers and freeze for future use.

Making breakfast foods is seriously my go-to these days (besides some sort of taco thing in a crock pot). I’m hopeful I can make this with my almond milk because it looks so good.
Jana says
That “taco thing” sounds good! We’ve actually used almond milk before with great results!

I’m so with you on not being a morning person. I would much rather make breakfast or do anything at night if it means I get to sleep in longer 😉 Thanks for this, just printed it off and making it tonight if I ever get off the computer!
I love that you blog with your daughter! What a fun bonding experience. Maybe I’ll rope some of my kids into joining me too!
Jana says
Thanks! And yes, sleep is a good thing!:)
Sam says
So do you add the melted chocolate to the blender too? It says melt until smooth, but then it skips to adding milk and eggs to the blender and doesnt bring the melted chocolate up again?
Jana says
Yes! After you melt the chocolate add it to the blender. Then add the milk and eggs and blend. Thanks for pointing that out to me.
