Hello, OSSS readers! My name is Cynthia and you can find me on my blog, Cynthia Banessa. I’m so happy to be a new contributor here with OSSS.

Are you looking for a quick easy and delicious dessert for your family?  Try baking these wonderful Granny Smith apples, filled with goodness!  This recipe is so easy  you can have the kids help you with the preparation. Not only can you have this as a dessert, you can also have this for breakfast served with a bowl of oatmeal. I’m sure you will fulfill your dose of fiber for the day.

I love cooking dishes that are not only tasty but are good for you. As they say, “An apple a day keeps the doctor away.” Keep reading to see how I put together these pecan craisin baked apples:

Ingredients

  • 1/2 cup of craisins
  • 1/2 cup of pecans
  • 1/4 cup brown sugar firmly packed
  • 1/2 teaspoon of cinnamon
  • 4 granny smith apples
  • 4 tsp butter
  • 1/8 tsp vanilla extract optional
  • honey to drizzle on apples

Instructions

  1. Preheat oven to 350 degrees F. In a small bowl, toss craisins, pecans, brown sugar and cinnamon, mix well. Set aside
  2. Working from the stem end of apple scoop about 1/4 inch of apple out.
  3. Firmly press dry mixture in each apple and top with a teaspoon of butter and vanilla extract, place in skillet or baking dish. Baked until apples are tender, about 35 to 40 minutes. Check periodically for tenderness, the apples can overcook very easily.
  4. Transfer apples to plates and drizzle with the pan juices and honey.

Thanks for having me this month; see you in March!
