I’ve seen this recipe a few different places across the web and decided I would finally give it a whirl. I must say, I’m pretty glad I did! I love that the cookie base has lots of graham cracker in it…giving a more authentic S’mores taste. I also opted to use Symphony Bars rather than just any po-dunk piece of chocolate and I decided to leave out the additional chocolate chips (just didn’t feel the need). The only thing I would change the next go-round is to use cold butter (sliced up) rather than softened butter. I didn’t like how the cookies were so flat…I might even add a tad bit more flour. Luckily, my flat cookies were stroking my taste buds just the way I like it.

Wanna make them? Okay, you will need butter, sugar, brown sugar, eggs, vanilla, flour, graham cracker crumbs, salt, baking soda, mini marshmallows, and chopped up chocolate bars (Hershey, Symphony…whatever you love).
Heat up the oven to 375. Combine 3 sticks (cold, sliced) butter and both sugars (1 cup white, 1 1/2 cups brown) in your mixer.
Add 2 tsp. vanilla and 2 eggs. Mix.
In a separate bowl, combine 4 cups flour, 2 cups graham cracker crumbs, 1 tsp. salt, and 1 tsp baking soda. Stir. Add to the mixer and combine well. Roll into balls and place on cookie sheet covered with parchment paper.
Bake for about 8 minutes. Remove from oven and press some marshmallows and chocolate chunks in each cookie. Put back in the oven for an additional 3 to 4 minutes. Let cool. Eat lots. Go for a run.

S’mores Cookies
Ingredients
- 3 sticks cold butter sliced
- 1 cup sugar
- 1 1/2 cup brown sugar
- 2 eggs
- 2 tsp. vanilla
- 4 cups flour
- 2 cups graham cracker crumbs
- 1 tsp. salt
- 1 tsp. baking soda
- Mini Marshmallows
- 2 giant sized chocolate bars chopped into chunks (Symphony, Hershey's, whatever you love!)
Instructions

Heat oven to 375 degrees.

In a mixer, combine the butter and both sugars.

Mix in the egg and vanilla until well combined.

In another bowl, combine the flour, graham cracker crumbs, salt, and baking soda. Add to the mixer and mix well.

Place dough balls on cookie sheet covered with parchment paper.

Bake for about 8 minutes.

Remove from oven and press chocolate chunks and marshmallows into the cookies.

Place back into the oven for an additional 3 to 4 minutes.

Let cool.
