So, here’s a little story. I have this sugar cookie recipe that I really love… they’re soft, chewy, and super addicting. I had a sweet reader try them, liked them, then mentioned that if I love those, I will surely love her Gingersnap Cookie recipe. Just like the sugar cookies, these Gingersnap Cookies are soft, chewy, and so amazing. I’m soooo glad she sent me this recipe! They’re definitely a new go-to.

There are still a couple of weeks to go before the official first day of summer, but across many parts of the country, summer temps are already here to stay. I don’t know about you, but the last thing I feel like doing when it’s boiling outside is turning on the oven. The A/C is already working hard enough! That’s why this is the time of year that you’ll find my family eating refreshing salads, dinners from the grill, and — when that sweet tooth acts up — no-bake desserts!

I’m back to share with you an fun little Valentine’s Day treat today. I absolutely love these cookies. Their fun Valentine colors…..the fact that they are chocolate. Love Love Love. I originally started with the mindset that these cookies would be frosted. But then as I realized that I had just purchased SO MANY bags of M&M’s with the intention of using them in baking. I am running out of time to make goodies for Valentine’s Day. Before long all these red & pink candies won’t be able to be used in my baking & there they will sit. So I scrapped the frosting idea, cut out a lot of time in the kitchen & added them to these fun Chocolate Sugar Cookies to make some really cute treats.

It’s the 10th of the month! Guess what that means!?!? I’ll tell you, it’s pretty fun… Each month on the 10th, TEN of my creative friends will will share a project on their blog around the same theme. These little “gems” are worth their weight in gold (or a few pounds on the scale, at least!) Even though I’m on this diet I talked about last month I just had to taste these cookies to make sure they were good enough to share…well, they most definitely are!! So much so, I have to confess I think I ate 7 of them. I just couldn’t stop. I’m weak. Very weak.

Don’t be hesitant about this recipe because of the ricotta. It makes the cookies soft and delicious…trust me, I would never lead you astray! And once the glaze hardens, they are perfect for packing up and taking to a friend, neighbor or teacher. Just think how these would brighten someones day!
