I’m a huge fan of oatmeal, so any oatmeal recipe will quickly peak my curiosity. I’ve had this recipe for Baked Banana Oatmeal kickin’ around the kitchen for a while now, just waiting for me to make it. I tore it out of the Parent & Child magazine and had a hunch it would be perfect for my family. And, it was! …especially with the addition of chocolate chips. It made plenty, was delish, and it’s always nice when I can serve everyone at once. I was afraid it wouldn’t be enough, so I doubled the recipe. But, it made tons! I had an entire 9×13 pan filled and 6 ramekins. So, we’ve been eating this for a couple days now.

Baked Banana Oatmeal
Ingredients
- 4 1/2 cups rolled oats or quick cooking
- 3/4 cup brown sugar
- 1 1/2 cup milk
- 3 TBS butter melted
- 3 eggs
- 3 tsp. baking powder
- 1 tsp. salt
- 2 tsp. vanilla
- 1 1/4 cups mashed ripe banana
- 1/4 cup chocolate chips optional
Instructions

Heat oven to 350 degrees.

In a large bowl, mix all ingredients and stir well.

Spread in a greased 9x13 pan or greased ramekins.

Bake for 20 to 30 minutes, until set.

Serve with milk poured over.

Reheat in the morning for great leftovers!
