Today, I’m going to show you how to make SPANISH RICE! There’s just something so good about rice and getting it with some beans, some enchiladas, and tacos, and kinda just mixing it all up and eating it.  That might sound gross to you, but I promise – IT IS NOT!

Something you would never guess about me is…I’m 1/2 Mexican!
It’s true… even if I’m SUPER WHITE!!Although I’m pretty darn white, I can still cook some AMAZING Mexican Food, and that’s because I have wonderful teachers like my MOM and AUNTS. TODAY, I’d like to introduce you to my mudda, Liv (and my dad – hence the whiteness).
Ain’t she pretty? (She’s gonna KILL me for putting a pic of her on here, but oh well) 😀 Liv is gonna show us how to make the best and easiest Spanish Rice. It’s actually the recipe of a popular Mexican Restaurant in Mesa called Mango’s (down on Main). If you’ve ever been down there and liked their rice, here’s their recipe. 🙂

Spanish Rice Tutorial

Ingredients

  • 2 cups rice
  • 3/4 c. oil
  • 1/2 c. tomato sauce
  • 6 stems cilantro optional
  • 1 tsp. salt
  • 1 tsp. minced garlic
  • 4 cups water
  • 1 tsp. chicken flavored bouillon cube
  • Dash of cumin
  • Dash of garlic pepper

Instructions

  1. Heat oil in large frying pan on medium heat.
  2. Add rice and cook until golden brown.
  3. Add 1 chicken flavored bouillon cube to 4 cups water and microwave for 3 minutes.
  4. When rice is brown, add water, tomato sauce, salt, garlic, cumin and garlic pepper to pan.
  5. Stir and cover pan. Let simmer for 30-40 minutes.

3. Add 1 chicken flavored bouillon cube to 4 cups water and microwave for 3 minutes.

And that’s it – I know, my mom makes it look too easy, huh?

Just know that this Spanish rice is the best side for any Mexican dish.

    I’m going to try this tonight – even being 1/4 Spanish hasn’t gotten me to be able to cook a decent Spanish rice despite many attempts… 2615th time’s a charm right????

    I am just wondering what type of rice you used in this recipe. Does it matter? We usually have pearl rice at home.

      I have actually never heard of pearl rice! I’m not sure. I typically use the long grain white rice. If pearl tends to cook the same as regular, I would imagine it’s okay. But, I can’t say for sure.
