It’s a state holiday that celebrates the day that the first group of Mormon pioneers entered the Salt Lake Valley. The history of this group of people is important for many reasons. They represent unwavering faith, courage, dedication, bravery and strength. They were real people who lived, they loved, they raised families, worked hard and wanted the opportunity to worship freely. They left a great legacy, not just for their families or members of their own faith, but for all who learn about them.

So, somehow I got it in my mind that I was craving bran muffins. Does that happen to normal people? I made these Apple Cinnamon Bran Muffins, and they were amazing. So amazing, that I think I think all efforts of eating healthy went out the window, as I believe I ate 7 of them, when they came out of the oven. According to My Fitness Pal app, I had exceeded my entire calorie/fat/carb allotment for the entire day. Yep.
In our house Christmas morning can be pretty busy. I’m sure it’s like that in most households. The kids get up, we have some family time & open gifts. Sometimes we get together with friends & once in a great while we travel to be with family.
This year will be quiet & I am so looking forward to it. The chaos has lessened now that the kids are older. However- one thing has not changed, the need to have something wonderful on hand for breakfast on Christmas morning.

This raspberry lemon bread is made with white whole wheat flour and hazelnut flour. The nutty flavor and texture of hazelnuts are incredible with fresh raspberries. The amount of oil used is less than most recipes out there and this uses Greek yogurt for added moisture. This summer bread is everything a great sweet bread should be; so moist, crumbly and delicious. The lemon glaze to go with it is just the perfect added tang.

I’m so excited to share this recipe with you today, because I’ve been trying out and tweaking so many different bread recipes over the past couple of months, and this one is one of my favorites! I have made a couple variations of this whole wheat no-knead bread, and this version has great texture and flavor, and would be perfect to go along with some soup or a big salad in the summertime! What I love most about this recipe is not only that you don’t need to knead it, but that you simply mix all the ingredients in a bowl, cover it and let the dough sit for about 12 – 20 hours and then just bake it off and you have a beautiful loaf of bread!
