While flipping through an old recipe book (America’s Most Wanted Recipes) the other day, I ran across these Broccoli Bites, supposedly a knock-off from a popular restaurant, Bennigan’s. I don’t think we have one of those in Utah. …well, let me check… mmm, Google says no. Have you been there? I’m guessing it might be at least kinda good, because these Broccoli Bites dipped in honey mustard, were AWESOME. Besides breakfast, lunch, and dessert, appetizers rank up there with my favorite dishes. I guess that just leaves out dinner. Poor dinner, my least favorite. I mean, I love dinner, but I would choose to eat everything else first. Unless, it was roast chicken with mashed potatoes and gravy, then dinner trumps all. What the heck am I talking about?? Try these Broccoli Bites. Ooooh, I’m remembering that there is a Super Bowl coming up, and these would make an awesome appetizer addition!
I made just a few minor recipe changes. For example, the recipe called for shredded Monterey Jack and Colby cheese. I had sharp cheddar on hand, so I used that, and would use it again. And, I used Panko bread crumbs, rather than Italian bread crumbs. I’m a big fan of Panko. I also wouldn’t use their honey mustard recipe again, but another one I have on hand (recipe included below.)
Broccoli Bites with Honey Mustard Dipping Sauce
Serves: 15 Broccoli Bites
- 3 eggs
- 1½ cup shredded cheddar cheese
- 1 12 oz. bag broccoli floret, cooked, drained, chopped
- 5 TBS real bacon bits (or the whole container, if you're me!)
- 1 TBS minced onion (or a few shakes of dry minced onions)
- 2 TBS flour
- Panko bread crumbs
- Oil, for frying
- Honey Mustard:
- ½ cup mayo
- 2 TBS yellow mustard
- 1 TBS dijon mustard
- 2 TBS honey
- ½ TBS lemon juice
- Beat the eggs in a small bowl, set aside.
- Place everything else, except for the oil and breadcrumbs, in a separate bowl and stir together. Heat oil in large skillet or deep fryer to about 350.
- Set up a shallow dish with bread crumbs.
- Using your hands, squeeze the broccoli mixture into large bite-sized round balls.
- Dip the balls in the egg and then roll in the bread crumbs.
- Place in the hot oil for about one minute, or until toasty golden color all the way around.
- Remove from oil and set on paper towels to drain.
- Mix up some honey mustard to dip the broccoli bites in. They would also be great in ranch dressing or even a spicy ranch. Just stir all the honey mustard ingredients together.
