15 Minute Meal – Creamy Tomato Fettuccine with Salmon (she: Nicky)

Although my family aren’t too fussy when it comes to dinner time (ok, we’re all human dust-bins really), I do struggle with meat-free dishes.

If I serve up a completely vegetarian dish, I usually find everyone looking up expectantly, waiting for me to put the ‘main dish’ on the table.
I’ve had a couple of great successes (my Cheesy Veggie burgers were a real hit – no bacon required yay!), but for the most part, trying to get one or two meat-free dishes in per week simply isn’t going to happen.

Now fish – I know I can get away with. So meals like this Creamy Tomato Fettuccine with Salmon are my savior in trying to reduce the meat consumption just a little.

Hello again OSSS readers! I’m Kristi from making it in the mountains and I’m back again to share another favorite recipe! This quick dish has been an absolute life saver as we trudge through month two of moving (you can check out a sneak peek of our new home here). Yes, you read that right … TWO MONTHS! Ugh! Anyway, all whining aside, this pasta salad has become our go-to side dish simply because it’s SO easy to whip up a big ol’ batch of it, not to mention it’s SUPER yummy and goes with pretty much everything! I just know y’all are going to LOVE it too!

Given the opportunity to get messy, dip fingers in and lick the spoon, I think most kids love cooking. Cooking with kids is so important because it not only teaches them important skills, but being involved often gets them more excited to eat meals.

My kids – Gracey aged 8 and Lewis aged 5 – have been making kitchen creations since they were toddlers.

I told Gracey I needed her to help in creating a lovely dinner for ‘Or So She Says’ and she jumped off the sofa and immediately started rummaging through her growing collection of cook books. Click on through to see what she decided to make for you today:

Baked Ziti ~ Kid-Friendly (and awesome!)

Alright, who is going to be the first person to look at my picture and tell me that’s not Baked Ziti… it’s penne… ?? I know, I know! I kinda just like penne noodles better because they’re not so big. But, penne, ziti, rigatoni… whatever you choose, your family will love this. I know mine does! It’s man-friendly (plenty of meat), kid-friendly (no onion or tomato chunks), and mom-friendly (easy to make!) When I ask the kids what to make for our big Sunday dinner, this recipe for Baked Ziti is often at the top of the list.
