I hope everyone had a fun and special Easter!
Now that it’s over, I’m sure I’m not the only one with an abundance of candy and hard-boiled eggs. Since you already know what to do with the candy, I figured I would share an easy recipe that will help you use up your eggs 🙂
We take our egg hunt very seriously.
I love how her curls bounce when she runs! 🙂
Okay, food. Egg salad is such an easy way to use up eggs. My favorite thing to do is to load it on a crescent with bacon and lettuce. Yum! It’s an easy recipe, here you are…
Egg Salad
Egg Salad Bacon Crescents
Ingredients
- 8 hard boiled eggs
- 2 tsp. minced onion
- 1/2 tsp. celery seed
- 1 tsp. dijon mustard
- 8 TBS mayo
- Salt and pepper to taste
Instructions
-
Chop up your eggs and dump them in a bowl.
-
Add remaining ingredients and mix well.
-
Load onto a crescent with lettuce and strips of bacon. (I like to add a little extra salt on top of the egg salad, after I put it on the crescent :))

I made these the day of your post–perfect timing, thanks! They were just right in between soccer practice, track practice, and Cub Scouts. My boys loved the bacon!
