Hey there! I hope you all are well and enjoying spring where you are. My big kids have just finished up their two week spring break and this mama is worn out! They keep me busy, but it’s no secret I love having all of my little birds home with me so it’s sad to see them go back to school.
One thing I love about having the kids home with me is being able make them hot lunches instead of the usual packed lunch or school lunch that they normally get. Grilled cheeses are always on the menu but I wanted to try something new and spice up an old favorite…
Growing up in the south, Pimento Cheese spread was a staple. We always had some on hand to snack on with saltines, but it wasn’t until my husband started making it from scratch that I really developed a love {and craving} for it!
To make this grilled turkey and pimento cheese sandwich, start with your favorite bread. I have made this sandwich with white, rye, pumpernickel or even a sandwich roll like the one in the picture. The main thing is having a vehicle to pile on as much of your homemade pimento cheese as you can.
I buttered the outside of the sandwich roll, spread on a healthy portion of pimento cheese, and then topped with a little smoked turkey. To grill the sandwich “Panini style” I placed a heavy cast iron skillet on top of the sandwich while it toasted in another skillet over med heat.
If you have never tried Pimento cheese, I hope you will now… I promise it will take your grilled cheese to a whole new level!
Here is my husband’s recipe. We joke that this is a “southern potluck” sized recipe because it does make a lot, but you can always half the recipe too! Grilled Turkey and Pimento Cheese Sandwich
Ingredients
For the cheese
- 1 1/2 lb shredded sharp cheddar
- 3/4 C mayonnaise
- 4 oz 1/2 block cream cheese
- 7 oz jar diced pimentos
- Salt and pepper to taste
For the sandwich
- Bread of choice
- Meat of choice
Instructions
For the cheese

Mix all ingredients together to create the pimento cheese spread
For the sandwich

Butter the outsides of your bread of choice

Layer meat and pimento cheese inside sandwich

Heat over medium in a frying pan until melted (use a heavy skillet on top of the sandwich to get the panini effect)
